The first Christmas cake was baked somewhere in 1880 by a man called Mambelly Bapu. He was a businessman who shipped milk, tea and bread to British troops in India. He decided to open his own bakery in his hometown, Thalassery in Kerala. He mastered the art of baking biscuits in Burma and wanted to available his baked goods to local people of the town. At that time there was one more bakery but it used to cater its goods to only British. Thus, he opened his own bakery named as 'Royal Biscuit Factory' and started baking. He offered people nearly 40 varieties of biscuits, bread and buns .
One day a man named Murdoch Brown who was a cinnamon planter went to his bakery with a plum cake. He asked him to taste the cake and requested him if he could make the similar cake. Mambelly Bapu asked him to give him 10 days. He prepared a Christmas cake for him on December 23rd. Browne was amazed with its heavenly taste and he ordered him to make more cakes. That's how Mambelly Bapu became the first Indian to make a cake.
